Stuffing Muffins
  1. Put your oven on at 250 degrees

  2. Cut up and/or break up potato bread and put on a cooking sheet

  3. Turning often to dry out the bread.

  4. Melt butter and cook all the vegetables and apple.

  5. Add spices and S&P

  6. Once softened, remove from heat and cool

  7. Mix eggs and broth in a bowl

  8. In a large bowl put toasted potato bread and cooked cooled vegetable mixture

  9. Add fresh parsley & cheese

  10. Pour broth mixture into bread mixture till it is absorbed.

  11. You want it to be a little sloppy but not too wet, so it's ok if you don't use all the broth.

  12. Spray muffin tins

  13. Fill each muffin hole mounding them (these do not rise, they will cook in whatever shape you put them)

  14. Cook at 375 degrees for about 25-30 mins till tops are brown.

  15. Cool completely before you try to remove from tins. Run a knife around the edges.

  16. These warm up very nicely cover with tin foil.

  17. If you are freezing them,defrost in fridge completely before warming up covered when you want to serve them.
