Southwest Chicken Taco Bowls
  1. Preheat oven to 425°F. Season chicken thighs with taco seasoning and a drizzle of oil. Bake for approximately 25 minutes.

  2. Chop red onion and peppers. Toss with a little oil and taco seasoning. Roast in the air fryer at 375°F for 15–20 minutes or until they're as crispy as you like.

  3. Make the sauce: blend Greek yogurt, salsa verde, lime juice, and cilantro until smooth.

  4. Assemble bowls: add jasmine rice, chicken, roasted veggies, shredded cheese, and drizzle or drench with the sauce.
