Chili Garlic Green Beans
  1. Heat oil in a wide skillet or wok over the highest heat possible until smoking. Add green beans in a single layer. Don't crowd, work in batches if needed. Leave completely undisturbed 2–3 minutes until the undersides blister and char. Toss and cook 1–2 more minutes until blistered all over and tender with a little bite still left. Season with salt.

  2. Push green beans to the sides. Add garlic to the center and cook 20–30 seconds until golden and fragrant. Add chili crisp, soy sauce, oyster sauce, sesame oil, and sugar. Toss aggressively until every bean is fully coated and glossy. The chili crisp should cling to the blistered skin of each bean. Toss everything together.

  3. Pile green beans high on a plate. Scatter fried shallots and lime juice generously over the top.
