Preheat your oven to 220°C/428°F.
Place the chicken breast, potato, onion, salt, pepper and garlic powder in a food processor and blend until all is minced. When ready, add the carrot and mix well.
Combine the breading mix (I like to toast the breadcrumbs for 4-5 minutes in the oven) to get that golden colour.
Shape the chicken mixture in your hand into balls and toss into the breadcrumbs to completely coat.
Line a baking tray with parchment paper. Brush generously with olive oil and arrange the balls. You can also spray some oil on top.
Bake for 12-15 minutes, turn over, then cook another 7-8 minutes or until cooked through.
Serve with honey chilli sauce or their favourite one. Enjoy!
