Cut the meat into strips or cubes.
Add spices to the meat and mix well, then put in the freezer for 1-2 hours.
Grind the meat through the finest perforated disc.
Add minced meat with salt, cutter phosphate, crushed ice, and cure to a food processor, mix until cohesive.
Grease a form, put the mass in, and shape it.
Cut the surface in a cross pattern.
Bake in a preheated oven at 180°C for 15 minutes, then reduce temperature to 120°C and finish baking.
Let it cool, remove from mold, and serve.
