Mince Pie Flapjacks
  1. Line a 9 inch x 9 inch baking dish with parchment paper and preheat oven to 170°C Fan

  2. Melt the butter, sugar and golden syrup together in a small pot on low heat until completely melted

  3. Add the dry ingredients (oats, cinnamon, salt) into a mixing bowl

  4. Pour the hot sugar mixture over the dry ingredients and stir

  5. Add half of the flapjack mixture into the prepared dish

  6. Add the mincemeat layer next, followed by the remaining flapjack mixture

  7. Press down with a spoon and bake for 30-35 minutes until golden brown

  8. Allow to cool to room temperature, then pop into the fridge to fully set for 3 hours

  9. Serve cut into squares
