Layer the croissants, ham, and gruyere into a baking dish.
In a separate bowl add the remaining ingredients, and whisk up until smooth!
Pour this mixture over the croissants, push croissants down into the custard mix, and top with fresh thyme, and baking in a 325 f oven for about 40-50 minutes until golden and bubbly!
Finish with a handful of chopped chives!
