Focaccia Rolls
  1. Mix dry ingredients together: bread flour, fine semolina, instant yeast, and salt

  2. Add lukewarm water and olive oil, and mix until combined

  3. Cover with tea towel for 30 minutes

  4. Wet your hands and perform 6 stretch and folds, turning the bowl after each fold

  5. Cover and rest for 45 minutes

  6. Add greaseproof paper to a large oven dish and grease with butter and olive oil

  7. Oil all utensils, hands, and work surface thoroughly

  8. Pour dough out and cut into 6 pieces

  9. Fold each piece 4 times, turn over, and shape into a ball

  10. Add rolls to the oven dish, cover, and rest for 45 minutes to rise

  11. Preheat oven to 220°C

  12. Oil your hands again and dimple the dough, then top with more olive oil

  13. Bake for 22-25 minutes

  14. Remove from dish and cool on a wire rack
