Mix dry ingredients together: bread flour, fine semolina, instant yeast, and salt
Add lukewarm water and olive oil, and mix until combined
Cover with tea towel for 30 minutes
Wet your hands and perform 6 stretch and folds, turning the bowl after each fold
Cover and rest for 45 minutes
Add greaseproof paper to a large oven dish and grease with butter and olive oil
Oil all utensils, hands, and work surface thoroughly
Pour dough out and cut into 6 pieces
Fold each piece 4 times, turn over, and shape into a ball
Add rolls to the oven dish, cover, and rest for 45 minutes to rise
Preheat oven to 220°C
Oil your hands again and dimple the dough, then top with more olive oil
Bake for 22-25 minutes
Remove from dish and cool on a wire rack
