Add to the bowl of a stand mixer the butter & sugar. Beat on high until fully mixed. Add in all the remaining ingredients and mix until a smooth dough forms.
At this point you can roll out the dough and make cookies right away OR chill the dough for 30 minutes or up to 24 hours well covered.
Preheat oven to 350 degrees. Place a large sheet of parchment on your kitchen counter & sprinkle it somewhat liberally with better batter to prevent sticking. Roll the dough out to desires thickness & cut out the cookies. Placing them directly on a nonstick baking sheet. Bake 10-12 minutes until the edges are lightly golden brown & the dough is puffy and looks baked through.
Repeat with the remaining dough using just as much better batter as you need to roll the dough out without sticking.
Allow to cool then frost. Store at room temperature in a sealed container or freeze for another day.
