Migliaccio Napoletano
  1. In a large saucepan, combine milk, water, butter, orange zest, vanilla, and salt. Bring just to a gentle boil.

  2. Slowly pour in the semolina while whisking continuously to prevent lumps.

  3. Cook on low heat for 4–5 minutes until thick and smooth. Remove from heat and let cool completely.

  4. In a separate bowl, whisk ricotta and sugar until silky smooth.

  5. Add eggs one at a time, mixing well after each addition.

  6. Once the semolina mixture is completely cool, fold it into the ricotta mixture until fully incorporated and smooth.

  7. Preheat oven to 180°C (350°F). Butter and flour a 24 cm springform pan.

  8. Pour in batter and smooth the top. Bake for 50–60 minutes, until golden and set in the center.

  9. Cool completely before removing from pan.

  10. Dust generously with powdered sugar and serve at room temperature.
