Preheat the oven to 400 degrees.
In a large mixing bowl, add potatoes, olive oil, and salt to taste. Toss to coat then transfer onto a lined baking sheet.
Bake for 30 minutes or until fork tender.
Once slightly cooled, slice the top quarter off and set the bottoms aside on the same lined baking sheet. Using a small spoon, carefully scoop out the inside into a mixing bowl. Add butter, ¾ cup cheddar, mozzarella, cream cheese, sour cream, heavy cream, bacon, salt, pepper, and red pepper. Using a potato masher or fork mix until thoroughly combined.
Using a small spoon, scoop the mixture into the hollowed potatoes until completely filled. Top with the remaining ¼ cup of cheddar cheese.
Return to the oven and bake at 400 for approximately 8-10 minutes or until the cheese is melted. Garnish with toppings of your choice and enjoy!
