Finely dice the cabbage.
Rice the cauliflower florets into "snowflakes" in the food processor.
Finely dice the persian cucumbers, cube up the avocado, finely dice the shallot, and add a handful of fresh chives and mint.
Finely chop the roasted pistachios and add them to the salad.
Zest the lemon and add the zest to the salad.
Squeeze the juice of 1 large lemon, add 3 tablespoons of olive oil, a couple pinches of salt and pepper, and toss everything together.
Taste and adjust the seasoning as needed.
Serve the salad right away.
