Heat oven to 200°C
If using, chop pak choi (1 head) and place onto foil
Place cod fillets (2) on top and scatter half the ginger and spring onions over
Mix soy sauce (2 tbsp), sugar (1 tsp), sesame oil (1 tsp), water (1 tbsp) and neutral oil (2 tsp). Pour around the fish, then seal into a parcel
Place parcel on a tray and bake for 10 minutes until the cod flakes easily
Serve with rice, spooning over the sauce from the parcel
