Candied Citrus Slices
  1. Slice clean citrus into ¼ inch slices

  2. Boil slices for 2 minutes in plain water

  3. Remove slices from water and drain

  4. Make 2:1 sugar to water syrup with fresh water and bring to a very light simmer

  5. Add citrus slices to the syrup and continue to simmer lightly until they are transparent (20-30 minutes)

  6. Remove citrus from syrup and allow to drain and cool

  7. Dehydrate using a dehydrator at 95°F until tacky (about 2-3 hours) or dry at room temperature (12-48 hours depending on humidity)

  8. Once mostly dry and just a bit tacky to the touch, coat lightly in sugar

  9. Dip in melted chocolate and sprinkle with sea salt if desired
