Cook the chicken
Heat oil in a large skillet over medium-high heat.
Season chicken with salt, pepper, and Italian seasoning.
Cook until golden brown and cooked through (about 5–6 minutes).
Remove chicken from the pan and set aside.
Toast garlic and orzo
In the same skillet, melt a little butter or add oil if needed.
Sauté garlic for 30 seconds until fragrant.
Add the dry orzo and stir for 1–2 minutes until lightly toasted.
Simmer orzo
Pour in chicken broth.
Bring to a simmer and cook uncovered for 8–10 minutes, stirring often, until orzo is tender and liquid mostly absorbed.
Make it creamy
Stir in cream cheese and parmesan until smooth.
Add the cooked chicken back into the skillet.
If too thick, splash in more broth or a bit of milk.
Finish with mozzarella
Sprinkle mozzarella over the top.
Cover skillet and let cheese melt (2–3 minutes).

Instructions
Garnish with fresh parsley or red pepper flakes if desired.
Tip
Add spinach in the last 2 minutes of cooking for extra veggies.
