Hot Chicken Casserole
  1. Boil chicken until done (usually about 15 minutes) do not overcook or chicken will be tough.

  2. Cut chicken into small bite sized pieces.

  3. While chicken is cooking, mince celery and onion.

  4. Saute celery and onion in 2 tablespoons of olive oil. While you sauté add ½ Tbl of Tony Chachere's.

  5. Add cut chicken and vegetables to a large bowl.

  6. Add all other ingredients and stir together. You will need to taste it at this point and make sure you have enough seasonings to suit your taste. You may need to add a little more mayonnaise or Tony's.

  7. After mixed thoroughly, add 1 cup of broth to make very moist. Stir and be sure to have enough liquid.

  8. Let sit for about an hour. During this time the chicken breast will absorb the liquid. This makes the casserole have much more flavor.

  9. Cook the casserole in a large baking dish on 350 degrees until it bubbles on the sides.

  10. Take out of the oven and sprinkle with Panko Bread crumbs.

  11. Put back in oven for about 10 minutes or until the top is browned.
