High Fiber Breakfast Cookies
  1. Preheat the oven to 350° F.

  2. Combine bran flour, plain flour, rolled oats, baking powder, and salt in the bowl of a mixer fitted with a paddle attachment. Mix on low speed until combined.

  3. Add the remaining ingredients and mix on low speed until completely combined. The dough will be very sticky.

  4. Using a small scoop or tablespoon, portion the dough into 2 tablespoon sized balls. Place dough balls on a parchment lined baking sheet and press down to flatten into ¼ inch high discs. Use wet fingers or another piece of parchment paper to flatten the dough.

  5. Bake cookies for 12 to 14 minutes or until golden brown.

  6. Store in an airtight container for up to 5 days, or in the fridge for longer. {Freezable?}
