Thaw your scallion pancake dough round. Use a pizza cutter to cut it into 4 triangles.
If using cheese, cut off a tiny piece of mozzarella string cheese and place it at the wide end of one of the dough triangles in the middle. Gently pinch the ends closed to keep the cheese from oozing out when cooking. If not using cheese, move to next step.
Starting at the wide end, roll the dough up all the way to the pointed end. Repeat for all the triangles.
Place the rolled up dough pieces into your air fryer. Crack an egg into a bowl, beat it, and use a food-safe brush to egg wash each piece.
Air fry at 375°F for 7 minutes, or until golden brown and flakey.
Optionally, drizzle with chili crisp.
