Hot and Sour Mushroom Tofu Soup

Procedure

Prep

  1. Soak the dried mushrooms in hot water for 15 minutes.

  2. While the mushrooms are soaking, drain the tofu and slice it into half-inch cubes.

  3. Drain the liquid from the can of bamboo shoots and slice them into pieces small enough to fit on a spoon.

  4. When the mushrooms have soaked for 15 minutes, drain the liquid and slice the mushrooms into small pieces also.

Soup

  1. Put the broth, soy sauce, sriracha, rice vinegar, and sesame oil in a soup pot and get it up to a boil.

  2. Add the tofu, bamboo shoots, and mushrooms.

  3. Reduce the heat and simmer for 10 minutes.

Thicken

  1. In a small bowl, mix the cornstarch and water. Stir this while adding about ¼ cup of the hot broth.

  2. Pour the broth, cornstarch, and water into the pot and stir the soup constantly for a minute or two while it thickens.

  3. Turn off the heat.

Egg drop

  1. In a small bowl, beat the egg with another tablespoon of water, then stir the soup gently as you drizzle the egg in.
