Preheat your oven to 400°F.
Cut your chicken breast into cubes.
In a small bowl, season the chicken breast with soy sauce, garlic, pineapple juice, salt, and pepper.
Dice bell peppers and onions. Then add them to a small bowl with pineapples (mix).
Grab a sheet pan and put the chicken breasts and arrange the pineapple chunks, diced bell peppers, and diced red onion around the chicken.
Season the pan with salt, pepper, and lime.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, flipping the chicken halfway through cooking.
Serve the pineapple chicken and vegetables over cooked rice or eat it as is!
