Amaranth Peanut Butter Balls
  1. Place ½ tablespoon of amaranth in a very hot, heavy skillet.

  2. Amaranth should begin to pop like popcorn almost immediately.

  3. Quickly stir with a flat edged wooden spoon or a pastry brush until amaranth stops popping.

  4. Immediately pour into a bowl.

  5. Pop remaining amaranth ½ tablespoon at a time.

  6. Allow to cool slightly.

  7. Stir in peanut butter and honey.

  8. Mix thoroughly.

  9. Form into balls about ¾-inch in diameter.

  10. Allow to cool completely.
