Quinoa Avocado Salad
  1. Place the quinoa in a medium saucepan over medium-high heat. Toast for 5 minutes, or until the seeds start to make popping sounds.

  2. Add the salt and water, bring to a boil, then turn down the heat to a simmer, cover and cook for 15 minutes.

  3. Remove from the heat and keep covered for an additional 5 minutes. Fluff with a fork and transfer to a large salad bowl to cool.

  4. To make the dressing, whisk together the olive oil, red wine vinegar, lime juice, Dijon mustard, oregano, salt and pepper.

  5. When the quinoa is cool, add the tomatoes, cucumbers, red onions, avocados and cilantro.

  6. Pour the dressing on top and stir gently to combine. Serve at room temperature or chilled.
