Blend avocado, Greek yogurt, low-fat milk, lemon juice, cilantro leaves, roasted peppers, and roasted garlic until smooth
Season sauce with salt and pepper to taste
Cook rice according to package directions
Divide rice across 9 servings and top with slow cooked chicken and poblano avocado sauce
