  1. Add cubed chicken breast, diced tomatillos, avocado oil, salt, garlic powder, onion powder, lemon juice, and cilantro stems to slow cooker

  2. Cook on High for 2-3 hours OR on Low for 3-4 hours

  3. Roast garlic cloves, poblano peppers, and jalapeños at 400 degrees for 30-35 minutes

  4. Blend avocado, Greek yogurt, low-fat milk, lemon juice, cilantro leaves, roasted peppers, and roasted garlic until smooth

  5. Season sauce with salt and pepper to taste

  6. Cook rice according to package directions

  7. Divide rice across 9 servings and top with slow cooked chicken and poblano avocado sauce
