Prepare the sauce by mixing minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper in a bowl. Set it aside.
In a shallow pot, add spam, sausage, tofu, rice cakes, onion, enoki mushroom, and kimchi. Then add the sauce and chicken broth. Cover with a lid and bring the stew to a boil over high heat.
Once the stew starts boiling, add ramen noodles and cheese. Cover the pot with a lid again and let it cook for a few minutes until the noodles are cooked through.
Remove the lid. Garnish with green onions. Serve hot with a bowl of steamed rice (optional), and enjoy!
