Chicken Pad Thai
  1. Soak noodles in boiling water per packet instructions (do NOT cook in boiling water), drain and rinse quickly just before cooking

  2. Heat oil on high, cook onion and garlic for 30 seconds

  3. Add chicken and cook until it changes from pink to white

  4. Push chicken to side, add whisked egg on the other side and scramble to partly cook, then mix into chicken

  5. Add beansprouts, then noodles, then pour over sauce

  6. Toss gently for 1-1.5 minutes until noodles absorb the sauce, adding garlic chives and half the peanuts halfway through

  7. Serve immediately, sprinkle with remaining peanuts and chilli powder to taste, and drizzle with lime juice
