Slice open the sausages and pull out the sausagemeat, discarding the skins
Place the sausagemeat in a mixing bowl with the fresh herbs, mustard, black pepper and sourdough breadcrumbs, and season with salt
Use your hands to combine the ingredients until everything is evenly mixed
Divide the mixture into 4 balls and press it firmly together in your hands, pressing it flat until it's around 5mm thick all the way through
Place the flour, beaten egg and panko breadcrumbs in separate bowls or plates
Season the panko breadcrumbs with salt and pepper and stir in a tsp of fresh herbs
Dip each schnitzel in flour until coated, then dip in egg, then coat in panko breadcrumbs
Heat a pan of oil roughly 2mm deep
Fry the schnitzel on a medium heat for around 3 minutes on each side until the sausage is cooked through and the breadcrumbs are golden brown and crispy
Serve with chips and vegetables or salad
