Gluten-free Pizza Dough Recipe
  1. Place two-thirds of the water in a large bowl and bring the other third of water to boil. Add it to the cold water to activate the yeast. Whisk in salt, yeast, and olive oil.

  2. Mix by hand: Stir the yeast mixture into the flour until dough forms. Knead for about 10 minutes. Let rise for 1-2 hours.

  3. If using a mixer: Combine flour and yeast mixture in the mixer bowl. Let mix for 5-10 minutes. Let rise for 1-2 hours.

  4. Divide dough into 4 or 3 portions and let them rise for 1-5 hours.

  5. Shape dough into pizza base, handle carefully, flatten, and spread into a base. Stretch the dough to ¼ inch thickness.

  6. Fire up the Ooni pizza oven to 842˚F (450˚C). Launch pizza into the oven, turning every 20-25 seconds.

  7. Bake the pizza, ensuring it cooks evenly and bake a little longer, if needed. Enjoy with gluten-free friends!
