Protein Style Costco Muffins, Poppy Seed
  1. Pre-Heat oven to 415 degrees F.

  2. In a large bowl, sift and whisk together Bread Flour, Protein Powder, Butter Milk Powder, Inulin (if using), Lemon Zest, Baking Powder, Baking Soda, and Salt until incorporated.

  3. In a separate bowl, mash banana. Add to banana, oil, maple syrup, Eggs, Lemon Juice, Milk, Greek Yogurt, extract and whisk until combined. There may still be some lumps of banana.

  4. In batches of about a cup at a time, add the Flour Mixture from step 2 to Banana Mixture from step 3.

  5. Fold together until just combined and there are no flour streaks. Do not overmix.

  6. Scoop batter into greased muffin tins to the top.

  7. Bake for 6 min.

  8. Lower Temperature to 350 degrees F and bake for another 12 min or until a toothpick inserted into the center of a muffin comes out clean.
