Toss the beef with bicarbonate of soda and leave for 15 mins only. Rinse well, then pat completely dry.
Marinate the beef with soy sauce, cornflour, black pepper and oil for 15 mins.
Soak the dried rice noodles until just pliable, then drain well and toss in a little oil to stop them sticking.
Mix the sauce ingredients together.
Heat a wok or large frying pan until very hot. Sear the beef until just cooked then set aside.
Add more oil to the wok, then fry the garlic briefly.
Crack in the eggs and scramble.
Add the choi sum stems and toss briefly.
Add the noodles, sauce and choi sum leaves.
Toss the noodles over high heat until glossy and lightly caramelised.
Return the beef and toss until cooked through.
Finish with finely sliced fresh red chilli.
