Barbecue Glazed Tofu Burgers
  1. Cook onions and crumble tofu together with spices, bouillon seasoning and soy sauce.

  2. Mix the tofu mixture with panko, flour and vinegar to help bind everything together.

  3. Shape the mixture into patties.

  4. Brush the patties with a little oil and roast them in the oven.

  5. Finish the patties with a glaze of barbecue sauce.

  6. Cook down the cherry tomatoes until they are thick, tangy and caramelized to make the tomato jam.

  7. Assemble the burger with the tofu patty, greens and a dollop of the tomato jam.
