Blend cottage cheese, cream cheese, syrup, protein powder, vanilla, and salt until smooth and creamy.
Pour into silicone molds or mini muffin liners. Freeze 2–3 hours until firm.
Melt chocolate chips with coconut oil until smooth.
Pop the bites out of the molds and dip in melted chocolate.
Top with crushed graham or flaky salt if using. Freeze again 5–10 min to set.
