Preheat oven to 200°C/392°F.
Trim the fennel and cut into wedges, either 6 or 8 per fennel (depending on size).
Grease a baking dish with olive oil and sprinkle half of the parmesan.
Add the fennel in an even layer, season with salt and pepper.
Scatter with breadcrumbs and the rest of parmesan, drizzle with some more olive oil and bake for 30-40 minutes.
