Soak uncooked glass noodles in warm water for around 10 minutes, until noodles are soft.
Combine the seasoning in a bowl, mix well until sugar is dissolved.
Heat up oil in a pan over medium low heat. Add beaten eggs to the pan. Once the egg is set, break the cooked eggs into smaller pieces. Remove from pan and set it aside.
Heat up oil in the same pan over medium high heat. Add garlic, spring onions and dried shrimp. Stir fry for 30 seconds, or until fragrant.
Add carrot and shiitake mushrooms. Stir fry for 1 minute.
Add cabbage. Stir fry 2 minutes 30 seconds.
Add spring onion green part, cooked egg, soaked glass noodles and seasoning. Stir fry until glass noodles are coated with seasoning and all ingredients are mixed well.
Serve on a plate, garnish with more spring onions, enjoy!
