Heat a pan over medium-high heat and add olive oil
Add diced onions and bell peppers to the pan and cook until onions are translucent and peppers are soft, seasoning with salt and pepper
Add minced garlic and stir until fragrant, about 30 seconds
Add chili powder, paprika, and cumin to the pan and stir well
Add mashed sweet potatoes to the pan and mix together
Add ¼ cup water and cover with a lid to steam for a few minutes
Add the drained black beans to the mixture and stir gently to combine, keeping the beans intact
Keep the mixture hot with the lid on
Heat a separate pan over medium heat and place a tortilla in it
Add cheese to half of the tortilla and let it melt
Add a portion of the sweet potato and black bean mixture on top of the cheese
Fold the tortilla in half and cook until crispy on both sides
Plate and serve with salsa and sour cream if desired
