  2. Whisk eggs in a large mixing bowl. Add all remaining ingredients and whisk until smooth. Rest batter for 5 minutes.

  3. Preheat a frying pan over medium-low heat. Spoon small rounds of batter into the pan.

  4. Cook 1 minute, until bubbles form on the surface. Flip and cook 20–30 seconds until golden and set.

  5. Transfer to a plate, cover with a towel to keep warm, and repeat with remaining batter. Serve with your favorite toppings.

  6. Thermomix Method

  7. Add ghee/oil/butter to the mixer; melt 3 min/90°C/speed 1.

  8. Add remaining ingredients; mix 10 sec/speed 5.

  9. Cook pancakes as above, keeping them warm until ready to serve
