Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a small bowl, whisk together almond flour, coconut flour, baking powder, garlic powder and onion powder. Set aside.
Add mozzarella and cream cheese to a large microwave-safe bowl. Cover the cream cheese with mozzarella. Melt in the microwave at 30 second intervals, stirring after each interval until completely melted and uniform.
Allow cheese dough to cool slightly so that it is still warm but not too hot.
Add cheese, 2 eggs, and almond flour mixture into a food processor with dough blade attachment. Pulse on high speed until the dough is uniform.
Scoop out dough and place onto a large sheet of plastic wrap. Knead a few times until you have a uniform dough ball.
Wrap your pastry board with plastic wrap. Lightly coat your hands with oil and divide dough into 8 equal parts. Roll each into smooth 1 inch thick sticks.
Brush the surface of rolls with egg wash.
Bake rolls for about 15 minutes or until just cooked and starting to brown.
While baking, prepare the garlic butter topping by melting garlic, butter, and oil in a small saucepan.
When breadsticks are just done baking, brush them with the garlic butter topping and sprinkle parmesan cheese and parsley.
Place breadsticks back into the oven and bake for an additional 3 minutes or until golden brown.
