Prep: 10 minutes total :45mins
Slice sundried tomatoes into strips and reserve the oil
Chop the onion
Thinly slice the shallots
Zest and juice the lemons
Season with salt and pepper to taste (about 1 tbsp of salt)
Use a tube of sundried tomato paste or puree a jar if you can't find the tube
Brown 1 lb of ground protein (90ish% ground beef or spicy italian sausage)
Add 1 tbsp basil, 1 tbsp Italian seasoning, and 1-2 tsp red pepper flakes (more if you like spice)
Add 2 cups of spinach
Deglaze the pan with 1 c dry white wine
Add 1-2 cartons (32oz) of low sodium chicken broth
Add 2 (20oz) packages of premade tortellini or homemade (cheese or mushroom recommended)
Stir in ½ c - 1 cup of heavy whipping cream
Add a knob of leftover parmesan rind or 1 cup-ish of grated parmesan
