Preheat the oven to 425 degrees.
Peel your carrots and cut on the diagonal into ½ inch-¾ inch thick pieces.
In a small bowl, combine the olive oil, honey, garlic, salt, and pepper. Toss this mixture with the carrots.
Cover a baking sheet with foil (or parchment) and spray with cooking spray. Add the carrots in a single layer.
Roast for 20-25 minutes until fork-tender and browned. Shake the pan a few times during cooking.
Taste and season with salt and pepper if needed.
