Mediterranean Chicken Patties
  1. Heat one tablespoon of olive oil in a skillet over medium heat. Sauté the diced onions until translucent (about 5 minutes), then add minced garlic and cook for an additional 30 seconds.

  2. In a large bowl, combine the sautéed onions and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.

  3. Shape the mixture into approximately eight patties (½ inch thick).

  4. In the same skillet, heat the remaining olive oil over medium heat. Cook each patty for about 5-6 minutes on each side until golden brown and cooked through.

  5. Drain on paper towels and serve warm with your favorite garnishes.
