Start by tearing your mushrooms up into fine strips and adding to a pan on medium heat.
Press down with a spatula to extract as much water out as possible, after around 8-10 minutes your mushrooms should be dry and slightly browned.
Add the rest of the bbq ingredients into the pan and reduce the heat to low, mixing until combined.
Split the mushroom mix into two piles and add a sprinkle of cheese on top of each. Add a little water into the pan and cover to melt.
Toast the brioche buns then it's ready to assemble!
