In a Pyrex, add 1 cup washed jasmine rice, 2 cups water, 1 packet mild Siete seasoning, ½ can black beans, rinsed, and 1.5 tbsp Better Than Bouillon roasted chicken base.
Mix really well.
Top with sliced red pepper and red onion, drizzle with olive oil, then sprinkle chili powder and a tiny pinch of salt.
Cover and bake at 400° for 30 minutes.
Let it sit for a few minutes, fluff it up.
Serve in a bowl with your choice of protein or toppings, or serve as a side.
