Homemade Oatmeal Cream Pies
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

  3. Beat in the eggs one at a time, then stir in the vanilla and molasses.

  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

  5. Fold in the quick oats.

  6. Drop rounded tablespoonfuls of dough onto the prepared baking sheets.

  7. Bake in the preheated oven for 10-12 minutes or until lightly golden.

  8. Allow cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.

  9. In a medium mixing bowl, beat together the powdered sugar, butter, cream, cream cheese, and vanilla until smooth.

  10. Spread a generous amount of cream filling onto the flat side of one cookie, then sandwich with another cookie.

  11. Repeat with the remaining cookies.

  12. Serve and enjoy!
