Plant Powered Iron Salad
  1. Cook the quinoa with 1 cup of water and a pinch of salt. Once cooked, set aside to cool.

  2. Add the chopped kale to a large salad bowl. Drizzle over a little olive oil and lemon and a pinch of salt. Use your hands to massage the kale for around 1 minute. Set aside to soften.

  3. Prepare the remaining salad ingredients.

  4. Add the dressing ingredients to a small jug and mix well.

  5. Add the cooled quinoa to the salad bowl along with the lentils, cucumber, red cabbage, sundried tomatoes, spring onion, and fresh herbs. Coat in the dressing and toss well.

  6. Serve with the pumpkin seeds and enjoy!
