Great Greek Grain Salad
  1. In a large bowl, toss together the quinoa, hemp seeds, cucumbers, olives, scallions, bell pepper, basil, and parsley. Add the lemon juice and toss again, then season to taste as needed with salt and pepper. If desired, drizzle on olive oil and toss once more.

  2. Enjoy as is, or with canned chickpeas or Homemade Tofu Feta.
