Pre heat oven to 425F
In a food processor, or in a large bowl, add onion, garlic, and blitz for 30 seconds. If you dont have food processor just chop as finely as possible.
Add in beef, and spices, yogurt and blitz for 1 minute. If no food processor, just knead with your hands as if you were kneading bread!
Lay a large piece of parchment paper on the counter surface and place ⅓ of the meat onto the sheet of parchment.
Place another piece of parchment over top and then using your hands and a rolling pin (or a wine bottle!) and roll the meat very thin.
Roll the meat tightly in the parchment paper, starting from the long side, folding repeatedly until it resembles a flat rope.
Transfer the parchment-wrapped meat to a baking sheet and bake at 425°F (200°C) for 20 mins minutes or so.
Let cool slightly and then unroll the parchment paper and using your hands shredd the meat apart.
For bonus points, place meat slices into hot oiled pan to crisp the outside.
Serve with donair sauce, tomatoes, and onions.
