In a bowl, mix well ½ cup of oats, ½ cup milk, 1 tsp chia seeds, 1 key lime juice and zest, and 1 tbsp maple syrup or honey.
Pop into the fridge to set.
To make the topping, in a blender process till smooth ¼ cup yogurt, ¼ cup cottage cheese, ½ tsp vanilla, and ½ tbsp maple syrup or honey.
Spread topping onto the oats, top with additional key lime zest and crumble 1 graham wafer (use GF as needed).
