One Pot Wonder
  1. Dice the onions, garlic, and vegetables, keeping them roughly the same size.

  2. Heat a large pot or Dutch oven over medium-high heat with olive oil.

  3. Add the onions and hard herbs, and season with salt and pepper.

  4. Add the chorizo and chicken, and let them render and brown.

  5. Add the garlic, cumin, coriander, and smoked paprika.

  6. Add the vegetables one by one, allowing the pan to come back to temperature between additions.

  7. Pour in the canned tomatoes and a splash of water, and bring to a simmer.

  8. Cover and simmer for 15 minutes to cook the chicken and tomatoes.

  9. Add the beans and greens, and simmer for 5 more minutes.

  10. Stir in the fresh basil just before serving.
