Add the water to a bowl and sprinkle the gelatin powder on top. Let the powder absorb the water for a few minutes.
Heat up coconut milk, sugar, salt, and lime zest on medium-low heat until the sugar is dissolved. Don't let it boil.
Remove from heat, add the vanilla extract.
Add the gelatin powder mix into the coconut milk mixture and mix together until smooth.
Pour into greased ramekins or cups, top with a little more lime zest, and refrigerate overnight.
