Cook noodles according to package directions. Go slightly past Al dente. Immediately put in cold water. You may store overnight in air tight container. Leave noodles very wet. Lay them flat.
Cottage cheese layer: Combine cottage cheese, egg and onion salt. Taste to ensure seasoning and onion flavour.
Potato layer: Mix mashed potatoes with cheddar, salt and pepper.
Make the casserole: Put 3 or 4 noodles in the bottom of a greased 9×13 pan. Cut ends so everything is neat and lays flat. Spread with all the cottage cheese mixture. Add 3 or 4 more noodles. Spread with all the mashed potato mixture. Add the remaining 3 or 4 noodles.
Onion & Bacon topping: Melt butter in a skillet and sauté onions until soft and golden. Fry the bacon until soft edging towards crisp. Scoop the bacon into the onion mixture and add half the bacon fat. Mix well. Spread over the casserole.
Cover with foil and bake at 350°F (175°C) for about 30–35 minutes. Remove foil and bake 10 more minutes.
Let stand for about 10 - 15 minutes before cutting.
To freeze, cool completely. Leave in dish or cut pieces. Thaw overnight and warm up in oven or microwave.
Serve with sour cream and garlic sausage.
