Roasted White Potato And White Bean Soup
  1. Roast eight white baby potatoes, half a white onion, and one clove of garlic in an oven at 375°F for 45 minutes

  2. Allow roasted vegetables to cool slightly

  3. Put roasted vegetables in a blender with 4 cups of chicken bone broth and one can of drained white beans

  4. Blend until smooth

  5. Serve with shredded Parmesan cheese on top
